Nutritional evaluation of isabgol seed cocktail as a nutrient packed snack

Abstract:
Aim: To standardize “Seed cocktail” by incorporating Isabgol as a functional food in mixture of seeds for improving digestion, maintaining weight and fibre in daily diet.
Methods: Four combinations of seed cocktail were prepared by mixing Isabgol seeds at different substitutional levels and were analysed through sensory evaluation. Best accepted product was subjected for nutritional analysis and shelf-life study. The seed cocktail was formulated by mixing Isabgol seeds at different substitutional levels with fibre and calcium rich seeds such as pumpkin seeds, sunflower seeds, flax seeds, fennel seeds, kalonji, black and white sesame seeds.
Findings: Seed cocktail with 25 percent Isabgol seeds incorporation was observed to be most preferred by panellist. The nutritional composition of best accepted seed cocktail revealed that it had moisture (6.73 g), protein (15.76 g), fat (23.34 g), ash (4.67 g), crude fibre (27.67 g), total dietary fibre (32.50 g), carbohydrates (49.50 g), energy (471.10 Kcal) and minerals (phosphorous, calcium, magnesium, sodium, zinc, iron and potassium) 120 mg, 640 mg, 38 mg, 45 mg, 2.35 mg, 15.40 mg and 550 mg per 100 g respectively. Shelf-life study indicated the product was fit for consumption up till 90 days of storage at ambient temperature with sensory score ranged from mildly acceptable to moderately acceptable on a 9-point hedonic scale till the end of storage period of three months.
Conclusion: Utilization of Isabgol seeds in the daily dietary in functional foods like seed cocktail will aid in improving digestion, weight management and can be consumed as Nutri-snack that helps to obtain the exclusive nutritional and health benefits of the whole grain as well as Isabgol husk.
