A review on the valorisation of fruits and vegetable agro-waste as nutrient, bioactive, and dietary sources

Abstract:
Fruits and vegetables are key components of human nutrition, offering essential vitamins, minerals, and bioactive compounds. However, during processing, substantial by-products such as peels, seeds, pomace, and skins are generated, which are often discarded as waste. These by-products are rich in bioactive compounds, including polyphenols, carotenoids, dietary fibre, vitamins, and minerals, that exhibit antioxidant, antimicrobial, and anti-inflammatory properties. Despite their nutritional potential, these by-products remain underutilized, with improper disposal contributing to environmental challenges such as pollution and resource wastage. This review explores the composition, health benefits, and applications of bioactive compounds derived from fruit and vegetable by-products by transforming waste into value-added products.
