Abstract:
Recently, alternative flours like barnyard millet have gained popularity in the food industry for their nutritional benefits and suitability for various dietary needs. Barnyard millet flour, with its fiber and low glycemic index, is ideal for diabetics and gluten-free diets. It is also rich in protein and other nutrients, appealing to health-conscious consumers. When mixed with wheat flour, these alternatives boost snack nutrition and introduce exciting flavors and textures. The present study entitled “Formulation of Cookies with the Incorporation of Barnyard millet flour” was undertaken with the following objectives: to prepare a composite flour blend of barnyard millet flour and refined wheat flour; to develop snacks Nankhatai from the prepared flour blend; to assess the sensory properties and nutritional composition of the developed snacks.
