Abstract:
The present study focused on the formulation of weaning mix using malt of green gram and barnyard millets in various proportions enriched with chocolate flavor. The various physiochemical and functional properties (Mentioned properties with values) of the prepared weaning food are analyzed. The sensory scores of mixes were determined by averaging the results of five semi-trained panelists, which included graduate students and faculty members who worked as academic staff members and had some prior expertise in sensory evaluation. It was observed that the sample T4, which comprised of 114 g of green gram and 76 g of Barnyard millet along with 10 g of Chocolate powder, had the highest overall acceptability out of the four formulations, T1, T2, T3 and T4.
